Fig and goats curd salad
Eat this with the fig flatbread
Place a goat’s cheese on each serving plate. Quarter the figs and scatter around it with the nuts, sultanas, watercress and herbs. Season with salt and pepper then pour the olive oil over the salad in a zig zag pattern.
Ingredients
- 2 fresh goat’s cheese
- 2 figs
- 1 tbsp shelled green pistachio nuts (unsalted)
- 1 tbsp golden sultanas
- 1 bunch watercress
- a few fennel fronds (optional)
- 6 basil leaves
- Sea salt and fresh ground black pepper
- 6 tbsp extra virgin olive oil
